Cheesy Hot Rice:

This is 138 kcal for 1/4th or 276 kcal for half.

Recipe:

1 small onion, chopped finely

1 1/2 cups uncooked rice (would be less calories with miracle rice)

1 tsp. dried oregano

1 (15 oz) can diced tomatoes

3 cups water

1 tsp. salt

1/2 cup grated reduced-fat Parmesan cheese

Pinch of chili powder if desired

 

In a medium saucepan over medium heat, saute onion until soft, about 1 minute. 

Add the rice, oregano, tomato, salt, chili powder and water, stir to combine. 

Bring to a boil and then reduce heat to simmer for about 20 minutes,

or until little holes begin to appear on the surface of the rice.  

Remove from heat and allow to sit until water has been absorbed

and the rice is tender, about 3 minutes. 

Stir in the grated Parmesan cheese and serve.

 I ended up with two times this (my dad ate the other half), which,

as you can see, is A LOT.

I could barely eat it all.

So yeah, I would suggest just using the normal serving size, which is about half of that.

That leaves you with a proper meal for less than 150 kcal.

 

It looks great and it doesn't taste half bad either.

This is definitely one of the best recipes I've found and tried so far.

 

 

 

 

 

 

 

 

 

 

My opinion on this:

 

difficulty:

This was really easy to make.

Just throw everything in a pot and wait for it to be done.

 

Taste:

It tasted great.

I did use a herbal mix instead of oregano and garlic powder instead of chili powder,

so that might make a difference, but still, I loved this.

 

Serving Size:

★ ★ ★ ★

It's not unusual for me to have to double the kcal on any recipe I find

because I just have too much of an apitite to live off the ridiculously small servings

the recipes are for.

In this case, I shouldn't have.

One serving (one fourth of the result) is plenty to be a proper meal.

Half is actually a little too much.
