Cauliflower curry:

196 kcal per portion (recipe makes 2 portions)

 

Recipe:

350 grams cauliflower rice.

4 low-fat hot dog (or chicken, or whatever meat/meat replacement you want).

250 ml curry sauce.

140 grams pineapple chunks.

 

Put the cauliflower in the food processor and blend until it has the consistency of rice.

Stir-fry the cauliflower for +/- 6 minutes.

While the cauliflower cooks, put on the sauce

(which I just got from a packet, one of those 'just add milk' packets which I made less kcal by using skimmed milk instead of full fat)

Add the hot dogs and the pineapple chunks.

After the rice is done, add it to the sauce and just mix it up.

 Leave it on the fire for about a minute longer and it's done.

Simple as that.

 

The entire recipe was about just a bit under 400 kcal, leaving one portion (half the recipe) at 196 kcal.

However, if you only use 180 ml of sauce (250 is a bit too much, as you can see)

and replace the hot dogs with bites of chicken filet or something,

obviously that would change how many calories it is.

The taste was just like a normal rice curry and the consistency was only the tiniest bit different. It wasn't better or worse, just different.

The rice was slightly smaller and grainier than normal rice, but other than that,

it was almost the same.

Probably because the sauce kinda drowned out any cauliflower/rice taste anyway.

 

 

 

 

 

 

 

 

 



Even my dad liked this, and we all know how he is with all my 'diet stuff',

so that's saying something.

He actually told me that while it tasted fine,

he could tell the difference between the rice grains and the cauliflower grains...

I didn't use any rice, though.

That which he called 'the rice grains' were just slightly bigger pieces of cauliflower.

 

 

 

 

 

 

 

 

 

 

 

 

My opinion on this:

 

Difficulty:

It was pretty easy.

 

Taste:

The taste was perfect.

It tasted just like normal rice curry (at least the way I make it),

other than the fact that I used slightly too much sauce.

But hey, we all make mistakes, right?

Even so, it was perfectly tasty, just a little more soupy than I would've liked.

Portion size:

★ ★ ★ ★
One portion is one VERY full plate of curry.

I had a veggie burger as well, because that was about to go bad

(and that would be a waste, since I LOVE those things),

so that added about 105 kcal to my meal, making it 301 kcal in total.

But honestly, that wasn't even really necessary.

The curry alone was more than enough to be a proper meal.
