Ana Banana Pancakes:

134 kcal for 3 small pancakes.

 

Recipe:

1 banana

3 egg whites

 

Peel and mash the banana, stir in the egg.

Heat a non stick skillet and lightly spray with oil.

Tun the heat down to medium-low.

Pour a circle of batter into the pan (I used about 2 tbsp of batter per pancake).

Cook until golden brown on the underside (around 1 minute).

Use a metal spatula to flip and cook until golden brown on the other side

(30 seconds to 1 minute).

 

I used one medium-sized banana and two egg whites.

When I went to put the third egg white in, I noticed that the mixture was already pretty much liquid, so I opted against using 3 egg whites.

I did put about 1 teaspoon of cinnamon in there, though, because I don't much like plain pancakes and I didn't have any low-kcal jam or syrup to put on them.

Cinnamon seemed like the next best thing.

They turned out a little weird-looking (probably because I purposely left the batter a bit chunky), not smooth like normal pancakes.

But the taste, though... OH MY GOD! It has been a REALLY long time since I tasted anything this GOOD!

If I wasn't worried about the calories, I could eat two-thousand of these and still not be sick of them, they're THAT good.

The cinnamon was a nice touch, but the banana was pretty overwhelming, so if you want cinnamon-banana pancakes, I suggest maybe using two, two-and-a-half teaspoons of cinnamon instead of one like I did.

But even without that, the banana itself...Well, I love baked banana, but I never eat it

because it's usually about 300 kcal a piece.

But this tasted JUST like baked banana like you would get it at the Chinese restaurant, only the outside is soft instead of crunchy.

Mashing the banana is a lot harder than it seems.

I purposely left some chunks in there, but even then it took me a proper five minutes

to get the banana mashed and mixed with the egg whites.

Hmmm... baked banana...

It was enough for a small breakfast, with the emphasis on 'small'.

One medium-sized banana and two egg whites left me with three small pancakes about 1 cm (0,4 inches) thick and about the size of my fist round.

And considering I have really small hands,...

It's good for jump-starting your metabolism when you're not really all that hungry in the morning, but when your stomach is growling, this isn't going to quiet it much.

And for 134 kcal I was really hoping for a proper meal, because this is

not a recipe I can guiltlessly double.

That would leave me with a 270 calorie BREAKFAST, where my limit for breakfast is usually 200.

Still, I do love these.
